Abstract
The device consists of a stationary cylindrical casing with internal vanes, inside which is a rotor also fitted with vanes. The prod. passes through the casing and is processed by the action of the moving and stationary vanes. It is proposed that: - the dia. of the rotor is reduced in the area near the inlet to the casing, - the largest dia. of the rotor is between 70 - 95% of the dia. of the casing, - the smallest dia. of the rotor is between 30 - 70% of the dia. of the casing, and - the rotor vanes are arranged at an adjustable angle to the axis of the rotor. One or more steps in rotor dia. may be used between the largest and smallest rotor dia. and the length over which the rotor dia. changes is at least one sixth of the total rotor length. The rotor dia. increases steadily from the smallest to the largest dia. or between the steps in dia. where these exist. USE/ADVANTAGE - Process is used )in the treatment of dispersions of solid particles in fatty suspensions, such as chocolate products, in order to improve their flow characteristics and their ease of handling in further manufacturing stages. The intensity and duration of the shearing treatment to which the product is subjected is made more uniform, and its suitability for further processing is maximised.
