Abstract
This paper presents data which show that the determination of NADH fluorescence during fermentation of microorganisms makes it possible to obtain information on the metabolism of cells. Analyses were carried out in batch and continuous cultures under aerobic and anaerobic conditions. For the continuous in-situ fluorescence determination a fluorescence probe developed by Beyeler was used. The influence of the cell concentration and the effect of varied concentrations and turnover rates of the substrates glucose, ethanol and oxygen on culture fluorescence were examined.
